Let’s do the Jerk !!

If the weather EVER gets warm and dry, I like to use the grill for all foods.  One way to spice up any meat is to add Jerk Seasoning Rub.  This Caribbean spice method can be as hot as you want it.  Serve with Tropical fruits like: Pineapple, Mango, Kiwi, Papaya or make a fruit salsa.  Rice side dish and a salad and you’re ready to Limbo! Today, its Jerk Pork !

Jerk  Rub 

3Tbsp             Ground Coriander
3Tbsp            Ground Ginger
3Tbsp            Light brown Sugar
2Tbsp            Onion powder
2Tbsp            Garlic powder
2Tbsp            Kosher Salt
+/- 2 Tbsp   Habanero powder or Cayenne pepper
1 Tbsp           Thyme
2 tsp              Black pepper
2 tsp              Cinnamon                 
2 tsp              Allspice                     
2 tsp              Ground Cloves
Mix all spices together, rub generously over meat and let stand for at least 20 minutes.  Grill / Cook any method.
